What is the ideal food cost percentage for a restaurant?
Most full-service restaurants target a food cost percentage between 28% and 32%. Fast-casual, pizzerias, and bars often operate between 20% and 25%, while high-end steakhouses and seafood restaurants can range from 32% to 38% due to expensive proteins.
What is the difference between theoretical and actual food cost?
Theoretical food cost is the ideal cost calculated strictly from recipes and portions sold. Actual food cost is calculated from period inventory changes (Beginning + Purchases − Ending − Comps). The spread between them reveals waste, spillage, theft, and over-portioning.
How do you calculate suggested menu price from food cost?
Suggested Menu Price = Recipe Portion Cost ÷ Target Food Cost Percentage. For example, if a burger costs $5.18 to make and the target food cost is 28%, the suggested price is $5.18 ÷ 0.28 = $18.50.
Why must ingredient yield and trim loss be factored in?
Raw ingredients lose weight during trimming, butchering, and cooking. If whole beef tenderloin has an 80% usable yield, the effective cost per usable ounce is 25% higher than the raw purchase invoice price.
